Temperature affects how we perceive flavours and aromas.
When wine is too cold, its aromas and flavours become muted, and the acidity or tannins can seem overly sharp.
When it’s too warm, alcohol tends to dominate, making the wine taste unbalanced and heavier than it should.
Think of it like this: a warm beer isn’t as refreshing, and an icy-cold red wine can taste tight and one-dimensional. Just like with beer, spirits, or coffee, getting the temperature just right unlocks the wine’s full potential.
The perfect serving temperature depends on the style of wine. Here’s a handy guide:
Sparkling Wines & Champagne: 6–10°C
Crisp, fresh, and lively – just how they should be!
Sparkling wines love to be served chilled. The cold temperature preserves the bubbles and keeps the wine tasting bright and refreshing. Too warm, and the bubbles fade too quickly, making the wine seem flat. Too cold, and you won’t taste much at all!
Tip: Pop your sparkling wine in the fridge for at least 3 hours before serving, or give it 30 minutes in an ice bucket.
Light-Bodied White Wines & Rosé: 7–12°C
Fresh, zesty, and aromatic – the ultimate summer sippers.
Sauvignon Blanc, Pinot Grigio, and Rosé shine when served chilled, but not ice-cold. If they’re too cold, the vibrant fruit flavours disappear, leaving only acidity behind.
Tip: Store them in the fridge, but take them out 15 minutes before serving to let them warm up slightly.
Full-Bodied White Wines: 10–14°C
Smooth, complex, and layered – let those flavours open up.
Chardonnay, Viognier, and other full-bodied whites need a touch more warmth than their lighter counterparts. A little extra time out of the fridge allows the rich flavours and creamy textures to develop beautifully.

Light to Medium-Bodied Red Wines: 12–16°C

Full-Bodied Red Wines: 16–18°C
Rich, bold, and velvety – but don’t let them overheat!
Cabernet Sauvignon, Shiraz, and Malbec are best served at what’s often called “room temperature” – but beware! Traditional “room temperature” was based on chilly European cellars, not Aussie summers. If served too warm, reds can taste overly alcoholic and lose their balance.
Tip: If your red feels too warm, pop it in the fridge for 15–20 minutes before serving. You’ll be amazed at how much fresher and more structured it tastes.
